This recipe is definitely too good not to share! Although I’m now wishing I’d taken a picture of this gorgeous dish, Mike and I certainly weren’t thinking about anything but eating when it exited the oven, so maybe next time. I was able to use our own pork chops from our Tamworth pigs, which is the best pork we have ever raised. Thank you, Owen’s Farm, for introducing us to this breed! In addition, I was also able to use honey from Mike’s bees. The onion was from Walnut Run Farm, whom we are lucky enough to trade chicken for a CSA share, and the ginger came from our good friend and processing customer, Mick Kodner, from Dancing Creek Farm. We completed our dinner with a dessert of apple sauce, gifted to us from our friends Marsha and Steve Freed from Village Acres. We looked up “is applesauce okay for dogs?”, it is. So we also gave our dog some. As we finished, Mike said, “We certainly are enjoying a lot of good food around here.” I couldn’t agree more!

HONEYED PORK CHOPS
What You’ll Need:
2 tablespoons vegetable oil
6 boneless pork chops
3 tablespoons honey
1/2 cup water
1/4 cup soy sauce
1 small sweet onion, grated
1/4 teaspoon ground ginger
1/8 teaspoon ground pepper
What You’ll Need To Do:
Preheat oven to 325 degrees F.
Heat the oil in a skillet over medium heat and brown the pork chops, approximately 5 minutes on each side. Transfer to a baking dish.
In a bowl, mix the honey, water, soy sauce, onion, ginger, and pepper. Pour over the pork chops in the baking dish.
Bake pork chops 1 hour, to an internal temperature of 145 degrees F.
