The Value of One Chicken

How far does a four-pound chicken go? For a family of 2-1/2 people, it stretches to four meals.

We recently made a chicken for Sunday dinner. Over the next day or two, we made two or three chicken sandwiches for lunch and breakfast – I’ll eat anything at breakfast.

From the Sunday dinner, I created a stock that Christie turned into chicken corn soup, using the rest of the chicken. Now, we’re at three meals and we still have enough soup left over lunch the next day.

Once Cameron starts to eat more regularly, we might only make it to three meals.

Folks, it just doesn’t get any better than that.

    Folks, I have to share that I got these chickens before. One half chicken barely fit into my large oval crock pot. I cooked the chicken, made the stock and left overs into chicken vegetable soup and it was great. I know that I will be continuing to enjoy the fresh taste and meaty chickens that Mike and Christie are raising as long as they will keep selling them to me. And if I lived closer, you can be sure I would be over there to get some fresh eggs too. Thanks guys and keep up the great fresh products that you are producing.
